So I decided to copy the whole .config/ and the whole .local/ trees from

Could this mean there is something else needed to restore your Evolution
like it was before?
You cannot replace files that are open. Especially in the case of DConf
which mmaps (memory maps) its files, replacing such files while 'live'
will certainly not work.
yes, but I made another attempt, after Milan's reply, following his
suggestion. I stopped gdm from another console (and so evolution and
dconf have stopped), then copied the folder of the previous list. This
didnt' work.
So I tried another method: copying the whole .local and .config trees,
and this time it worked! So I suppose there should be at least another
folder to copy.
I also tried the last procedure into a virtual machine running the same
environment, and the results are the same.
