scheme) or is there no support for that stuff in the LDAP adressbook?

it seems both schema change and a code change would be needed to have
this working, as with schema you can make the field available, but there
will be no mapping between schema field and EContact field for it in the
code, thus it'll not be saved. I guess so from a really quick
walk-through the ldap addressbook backend code.
