The file-type-to-application linkage applies to all the GNOME desktop apps, not just Evolution. Evolution basically just asks the desktop environment "Hey, I have an attachment with this file type. What can I open it with?" But you're right, it wouldn't hurt to mention that in the User Guide. Nautilus provides the graphical interface for managing those file type associations at the moment. Granted, it's a little too hidden. And other apps like Evolution ought to be able to reuse that window so you don't have to save first and go to Nautilus. It's a known issue. Moreover, GNOME should learn what .docx files are by default are so you don't have to screw around with any of this. I'll ping the appropriate people. Matthew Barnes
