Usually unexplainable blocking hangs are caused by problematic name resolution (DNS), please check if you have configured that correctly. Also, lacking a line like "127.0.0.1 localhost" in /etc/hosts seems to block gnome programs. Also when the blocking occurs, check "top" to see whether evolution actually runs or is waiting for some I/O (I bet the latter).
