The LDAP support stops at a 1000 I believe. I also tried to use LDAP and
we have thousands of users. I ended up getting an export of the users
and creating an additional address book with those users. Over time it
will get out of sync, but for now it is a worthwhile work around.
Hopefully they'll increase, or remove, that limitation in Evolution.

Try rebooting, if this does not work the first time, delete and re-set
the ldap, then on the addess book properties window ==> display tab
==> click on find possible search bases, if that returns information
select it (means that you are at the least talking to the ldap server
(and this is far as I have been able to get with mine)).
