It does not remember. The zoom settings are not saved.

What you could do is file a bug (feature request) in bugzilla.gnome.org


Filed as http://bugzilla.gnome.org/show_bug.cgi?id=322040.  I used
priority Normal rather than Feature Request as IMHO the Zoom function is
broken without persistence.
