Sorry, I didn't explain myself. Somehow settings are not saved, I have
closed and restarted and setting is back to "password" and not "apop".
Could it be a problem of the graphical interface? how could I save the
setting APOP *manually* in a terminal?

And you should use gconf-editor rather than editing .gconf/apps/evolution/... directly.
I guess this is the setting I have to change but to which one and
where?

no, nothing to do with it at all. this is just for system administrator lockdown (which wouldn't be active).
