I'm new to Evolution, so I'm sorry if this has been asked before (I
couldn't find a searchable archive of this list).
I'm trying to make replying to mailing lists easier. I know that a
right-click allows a reply-to-list, but it's easy to forget - for a normal
mail, click on reply, for a mailing list mail right-click on reply...
You can use Ctrl-R for *R*eplying to the sender and Ctrl-L for replying
to the *L*ist (see Actions menu). Maybe those shortcuts are more easy to
remember? :)

there a way of configuring Evolution to use the List-id header if it
exists, and From/Reply-to header if it doesn't?
No, there is no such option. That's what Reply To List is for anyway. :)
If Reply would use List-Post [1] rather than From, there is no way to
reply off-list for advanced users, short of manually messing with the To
field in the Composer...
Mailing Lists are difficult to handle sometimes. There are lists (and
folks) out there with totally different opinions. Some lists consider
replying to the list as well as the poster evil and disturbing, others
consider not including (Cc) everyone who contributed to the thread
impolite...
Some lists are enforcing a Reply-To header, overwriting anything
explicitly set -- to keep threads on the list. This is generally
considered evil, but it seems to be necessary on some lists...
