[Evolution] toolbar display text

I feel like such a _noob_ asking this after using evo for a couple of
years now, but here goes:

I have text and icons on my toolbar by default  - always have since the
first version I started with a couple of years ago.  Now here's the rub:
I'm setting up evo for a new user on a thin-client running on my linux
terminal server and they only have icons - no text with it.

I've read the help, I've gone through gconf-editor with a fine-tooth
comb, I've gone through the settings, and I've googled on it.  I just
can't find any reference to text AND icons in evo.  Put me out of my
misery and kick me in the right direction :-)  PLEASE.

PS: I'm sure someone will tell me the setting is right in front of my
nose and what's wrong with me :-(
