Click on "Categories" in the "new card" window (File -> New -> Contact).
It's a multi-valued attribute, but see 3, below.

can I create such expressions? can I search by phonenumber or
postaladdress in evolution?
Don't think you can.
3, when I use "any field contains" option to search, I do found that
only email or name search supported, I can not get any result when I
input mobile or postal address.
The evolutionperson.schema would help you, if you can find it (look in
/usr/share/evolution/1.4/). Add it to the slapd.conf schemas in your
Openldap schema directory and slapd.conf, then restart service ldap.
