Seems guenther did not address all your questions. An opportunity for
me to chip in!
Although I wanna know everything, I actually do not. ;-)

Seeing as you're using the latest Evolution, this is under
Tools->Settings->Font Preferences
/me doesn't use HTML mail...
(Font settings for the UI are determined by Gnome, I believe)
It's been a long time now, since I used Gnome 1 desktop. But at least
for Gnome 2 desktops, there are no UI settings to change that (for Gnome
1.4 apps as Evo). You can use the .gtkrc.mine file to customize it.
3- An option for a different sort of date display. I find the
"Yesterday, Today" designations to be of no value. What's worse is that
they are confusing with saved email. Ideally the option to select an all
number format, possibly more than one all numeric format, or a named
month and date, or the yesterday today format.
Yeah, I totally agree with you, and many of us would like that. This
has also been discussed in the past. Rather than repeating myself, I
refer you to the link at the bottom of this message, where you will find
searchable archives of this list. Search for the string "LC_TIME" and
you'll find a partial solution, though it's not exactly convenient.
ack -- Eric, do you know if this has already be filed as wish in
bugzilla?
