I also installed some new packages from the Ximian-desktop channel,
perhaps one of those is missing from your system?

I'm running RH7.3. (just in case somebody missed my sig)

I have the following options for my spell-checker:
Catalan, Danish, German (Germany/Swiss), English
(American/British/Canadian), Spanish, French (France/Swiss), Italian,
Dutch, Norwegian, Portuguese (Portugal/Brazilian), Swedish

And these are the Evolution packages on my system:
[M8ram localhost M8ram]$ rpm -qa | grep evolution
evolution-pilot-1.2.0-1.ximian.1
evolution-devel-1.2.0-1.ximian.1
evolution-1.2.0-1.ximian.1

Perhaps one of the Ximian-developers can help you if you let us know
what system you're running?
