[Evolution] new user questions

Hello,

I'm a recent convert from mutt.  There are a few extra pieces in
Evolution I'd like to customize, but I've searched faqs, mailing list
archives, and the Evolution how-to and haven't found anything.

My guess is that there are no options to do what I'm looking for, but I
thought I'd ask and join the list for a while to learn more about my new
MUA.

1. Is there a way to customize the string...?

3. Is there a preference to handle multiple e-mail addresses?  Something
like, when I mail the linux group, use my linux group email address. 
When I mail anyone else, use another email address.

4. Can I use Vim as my editor when composing mail?  I tried once with
gvim, typed a message and sent, but it sent an empty mail.

5. In the contacts, when I adjust the width of my contacts, leave, then
come back, it goes back to the default width.  Can I make it stick or
remember?
