I also use fetchmail. I don't think a local IMAP server is necessary,
because Evo can read mails off a local mail directory.

Just install sendmail or qmail, then instructs fetchmail to deliver to
local mail directory via the MDA, which is sendmail/qmail.

For example, my .fetchmailrc has the following line for each of my pop
account:
mda "/usr/bin/procmail -d %s"

I've been reading fetchmail, maildrop, and qmail documentation as well.

If anyone could give me some pointers I'd appreciate it.
