You can run a POP server and an IMAP server at the same time. I do. I 
read the mail at work, thru the home firewall, via IMAP, in Windows. 
When I get home, I use Evo to POP the messages into local folders 
there.

Granted, this means I can't read old, archived mail while away from 
home, but if I did want that, I'd use IMAP from both locations.

What I've done so far is compile and install courier-imap.  I set up 3
virtual users and verified that the server works.  That's it so far.
I've been reading fetchmail, maildrop, and qmail documentation as
well.

Postfix. Great program.

If anyone could give me some pointers I'd appreciate it.

Use SASL to authenticate to your mail server when away from the home 
LAN.
