No big deal.
Just don't use evolutions ability to fetch the mail.

I use "fetchmail" to fetch the mail from my ISP.
I then use procmail to run it though 

   1) John Hardin's "sanitizer" -   http://www.impsec.org/e-mail-tools
and then
   2) Gregory Sutter's "junkfilter" - http://junkfilter.zer0.org

None of this is rocket science.
All of it  is script driven so you can modify it to your heart's content

Yes I know there are other filters from SPAM. YMMV.
