I was under the impression that for the CJK fonts, bold (and italic) was
synthesized from the normal font,
and that Evince (or Poppler really, I guess) fails to do so. Or maybe that
the dash in STSong-Light is mistaken for the "bold separator" etc.
I don't think that poppler tries to synthesize font styles, it just
depends on fontconfig to find an appropriate font. Poppler could be
doing a better job, so feel free to open a bug report at
https://bugs.freedesktop.org/enter_bug.cgi?product=poppler. It might
not be a high priority though, since documents really should be using
embedded fonts.
