Yes, that's why the new evince lives also in experimental.

Yeah, beacuse the poppler API changed, so the SONAME needed to be
bumped.

Well, that patch is also included in the newer poppler from
experimental. In fact, we are waiting for upstream to release a new
stable poppler, which was promised to happen in the next few weeks. The
problem for Debian is that due to the soname bump, some packages will
need to be rebult against the new API, so this needs a bit of
coordination.
