I happen to have a MeeGo 1.2 beta netbook on my desk, so this is
what's currently in our gnome-control-centre (2.30-based) shell:

- Wallpaper and fonts (upstream Appearance, patched)
- System Tray (custom, option to enable the legacy systray)
- Myzone (custom, options for the MyZone panel)
- Language (based on system-config-language, IIRC)
- E-mail Settings (Evolution's settings)
- Toolbar Settings (custom, options for the top toolbar
- Security and Passwords (custom, toggle for lock-on-boot and ability
to change your password)
- My Web Accounts (custom, configure social accounts)
- IM Settings (Empathy settings)
- Date & Time (system-config-datetime, IIRC)

- Trackpad and mouse (upstream with patches, I think)
- Printing (system-config-printer)
- Network Proxy (upstream)
- Keyboard (upstream)
- Sound (upstream)
- Power and Brightness (custom minimal power management interface,
just the timeouts)
- Monitors (based on the upstream but heavily patched)

If we ported to GNOME 3 platform but wanted to keep our experience
mostly the same then we'd be able to drop several entirely (e.g.
Background & Fonts, Printing, Date & Time), remove some others and
move to patches (i.e. Power, just hide a few settings that we enforce
instead).  We'd still want the settings that control *our* desktop
shell (i.e. MyZone, Toolbar) and there are some that are still
sufficiently different that we'd still need custom capplets (i.e.
Monitors).
