Banshee uses Gstreamer as its backend, so it can generally play anything that gstreamer can play, which should include the formats that you've listed.  Banshee is also able to automatically convert audio/video file types as necessary for a variety of devices -- as far as I know, this includes iPods.

audio i don't think we correctly transcode videos to device formats and sizes yet. transmaggedon or arista might provide the profiles for this?
