I think there are binary-based diff tools out there. Not sure if the
sync tools use them though.

That's an advanced scenario, and at least if it happens the option is to
fail fast and mark the sync as unresolvable conflict, without loosing
data (later you just decide which version of the data you want). As for
me, I don't need it so I don't need to wait until someone develops such
a complex addin :)
