File format is also already part of the design (format filters - I'm
ASSuming those will be part of saving, as well), so that's moot in this
context.  Encoding would be different tho, that's in addition to
format.  (Since gedit handles source code and such in special ways, and
we have different mime types for different language source files.)

Encoding would be implemented as just a drop-down/select, yes?
