I upgraded to Ubuntu Gutsy last week and so I got Tracker installed on
my box. Unfortunately Tracker has only indexed very few emails and it
looks like it doesn't index any new emails I'm receiving. 

trackerd tries to index emails that evo stored in its directories but a
file corresponding to an email is only stored when you have tried to
read the email or if you asked evo to always store emails locally. If
you never opened an email or tried to download all emails to synchronise
evo with email server then emails stay on the email server (but it
depends too on the email protocol and some settings!).

Evolution email is enabled in tracker-preferences 
I cannot find the logs in ~/.local/share/tracker/

You can make trackerd more verbose if you edit file
~/.config/tracker/tracker.cfg and modify Verbosity to something
different than 0.
