They look like regular email files that you save.  It puts them in a
path like this:


~/.evolution/mail/exchange/kelleys example com/personal/subfolders/Inbox/cache/04

And gives them names like this:

00000233e2dc

The cached files are human readable.


if possible can you get Exchange to use one of the above two methods?

Yes, it is possible to do Imap with Exchange, but then you lose the
calendaring support with Evolution I believe.
