Well, it wouldn't be much problem to keep a parallel list for each list, one is the list itself, the other is a list that points to the elements of the other list. One is only sorted by the order if insertion, and is used for the random/sequential play function. The other is a 'view port' into it. A button would allow switching between the two views.

Oh, now I know what you meant. You mean the "Track", "Album", etc. columns. Sorry for misreading. As far as I can tell, the reason sorting doesn't work on playlists is because some people want their playlists in a specified order, and sorting the list might kill that. But I'm not a developer or designer, so I can't really speak for them.
