In Planner, you can define a calendar specific to a resource that would
allow you to control when they're available to work on a task.  So if
the resource would only work on Mondays and Fridays, then the task
duration would reflect this.  The task itself is not split unless you
define multiple tasks, but the work against the task would be scheduled
correctly.
