It's easy to get a debian iso, and impossible to have orca running
throughout the installation. To start installing at the boot prompt hit s
and then hit enter. From there you get espeak which will take you through
the install. As a default process, mate is installed unless you choose
otherwise and orca is enabled for speech the first time you boot debian
post-install.

The third one is sid, and you could install stable then edit your
/etc/apt/sources.list and change every mention of stable to testing or sid
then run apt update to get to those other versions.
