In a couple of decades at my job, I've set up literally hundreds of dual
boot machines and I've never had any trouble. My advice is to just let
Ubuntu handle the repartitioning. I think that unless you really know
what you are doing, you are more likely to mess it up than if you just
let the Ubuntu installer handle it.
I cannot say that problems do not occur. But as far as I know, a Windows
update has never damaged the MBR in my experience and, as I said, I am
talking about hundreds of machines over two decades. I do not recall
ever having trouble booting into Windows after the Ubuntu installation
either. I would be careful not to accidently power down the machine
during the install but otherwise, I believe it's pretty safe.
Maybe I've just been lucky. Who knows?

You will have to check as I don't use Ubuntu.

So after playing around with various distros, I have decided to go
with ubuntu mate. However, I also still want to keep windows 10 so
I can duel boot.
The question I have though is. When I boot up to the ubuntu mate
installer and tell it to install along side windows, will it take
care of the Partitioning itself? Manually splitting the two drives
is what's putting me off. As I don't want to mess my win10 setup up.
