Hello Nimer,
To be fully honest with you, I don't think having a rolling release
would give you stability everytime.
Everything could be fine but as there are upgrade everyday it could
be a software or component broken at a given time.
On a stable release you could encounter issues too but as the system
is upgraded every 2 years for Debian stable you could have to deal
with migrations stuff every 2 years.
If you have difficulties with Debian, maybe it'll really help asking
on the Debian Accessibility mailing list what problem do you face on
the installer.
