Is it possible to use MATE? MATE is much lighter and faster than GNOME, and anything that you need that is part of GNOME will be pulled in by the package management automatically. You do need Orca, but it works pretty well if you're using the RPi 3B+. Older versions won't be as snappy, but MATE does work on them.
