Hi Andy,
it's LIOS, aka Linux-intelligent-ocr-solution.
I have queued for Slint's next big update a package built from git master on GitHub:
https://github.com/Nalin-x-Linux/lios-3
Ther is also a repo on GitLab
https://gitlab.com/Nalin-x-Linux/lios-3
but it is two commits behind at time of writing.
LIOS is amazing. I tried most features.
To build and run it I needed following dependencies:
py3gobject,pyenchant,pyinsane,python3,python3-pillow,speech-dispatcher,tesseract,tesseract-data,espeak-ng
The names may vary for another distribution.

LIOS drop-down menu entries are accessible with the Alt key:
Alt+F File
Alt+E Edit
Alt+I Image
Alt+S Scan
Alt+S Recognize
Alt+T Tools
Alt+P Preferences
Alt+H Help
From the menu, you can navigate with the arrow keys.
Some commands have a key binding, indicated alongside it.
