Hello Rusty!
I'm not sure about pre-written instructions. But at heart Ubuntu is a sort
of Debian, so you will have aptitude/apt-get. They are the package manager and
you can use them from the console. I think a command to upgrade your system
is:
aptitude dist-upgrade
As to a more accessible system, that depends on what you have installed at
the moment. There is orca, brltty, espeak. I think GNOME has all its
accessibility as part of the normal libraries.
But you could also try to download a Sonar image. I remember, you told me
about problems with getting it to boot from USB stick and there's no DVD
drive. Right?
If your braille display is not supported, you could also install espeakup.
It's a screenreader for the commandline also using espeak. It works fine on my
Arch Linux. Never tried it on a normal Debian sstem though.
