Andy,
Sounds like pulseaudio isn't supporting your m-audio card. I have a similar problem on my system. You should check the ubuntu forums to see if someone has found a way to get the card to work.

Any ideas on how to get this thing to work? I know Ubuntu people say
that OSS is no longer supported and that we need to find some different
way of doing this.

I’m totally stuck and it is starting to turn me off to linux/ubuntu.
