Orca has a laptop keyboard layout which you can select either at the
initial setup questions or after by going to the orca preferences.
I will admit that I don't know a lot about the orca laptop layout (I
will say later on how you get the keybindings used). Orca defines an
orca key which on the desktop layout is numpad0 (NOTE: I think insert
may work as well) but on the laptop layout is capslock As you point out
there are some functions (mainly flat review) which is on the numpad for
the desktop layout, I don't know whether the laptop layout redefines
this (It probably should).
So now to how you can tell what the orca key bindings are. Option 1: Use
learn mode and try some, press orca-key+h to enter learn mode, then orca
will say what a given key does until you press escape to exit learn
mode. Option 2: Enter orca preferences (orca-key+space) and right cursor
to the key bindings tab, in which you will find a tree view where
keybindings are defined and you can modify if desired.
Option 2 may be better if you just want a general list, option 1 may be
better when you have a feeling what to try but not quite sure.

That's a great concern of mine.
For instance, although my Laptop does have an FN-Key where I can force
it to emulate num-pad functionality, I do not use it, and would
strongly resist having to use that. I hardly do.
If Orca lacks such a thing in it, this would be a nice thing to see
put into it.
How difficult would this be to develop into the Orca screen reader,
without breaking the existing desktop keyboard functionality?
Have a look at something like the laptop keyboard layout put into the
JAWS for Windows screen-access program from Freedom Scientific, Inc.
Having a laptop keyboard layout similar to that in Orca where capslock
is also like the insert (orca key) and such.
If this already exists, great- but if not, I wanted to bring this up anyways.
