You *should* be able to go to the "Text Attributes" tab of the Orca preferences GUI and edit the 'paragraph-style' row in the table. I tried this, however, and it may be broken. I opened a bug on that here, which includes comments about presenting this information with Insert+f, WhereAmI, SayAll, and navigating by caret:

For the row/column headings information, I think I remember someone answering your question, but the short answer is:

1) Insert+r to set the current row as the row containing headers. Pressing Insert+r twice quickly clears it.

2) Insert+c to set the current column as the column containing headers. Pressing Insert+c twice quickly clears it.
