Hi.  I'm a Debian user, but I can answer most of your questions.
You will always get more accessibility from running the latest stabel gnome.
Here, I have 2 systems running Gnome: 1 32 bit and 1 64 bit.  As long as you use open source apps, you will 
have no problems with 64 bit.  if you need to run commercial binaries, you might run into issues with 64 bit.
