What about adding to NM a way to choose, from several active networks,
which one must be choosen as default route?

That would be nice.

I think that would be great, also, if we could choose if a connection
must set a default route or not.

I believe this is already possible if  I understand you. Edit a connection->IPv4 tab->Routes-> check box "use this connection only for resources on its network" or similar depending on distro.
