You were right, setting it to /var fixed it. Now nm successfully
connects to wpa_supplicant.
Unfortunately I still can't get a connection.
The dmesg log is filled with
  ipw2100: Fatal interrupt. Scheduling firmware restart.
messages and NetworkManager times out after 90 secs (I increased the
timeout from 20 to 90s). Again, I attached a log.
I use kernel 2.6.15.2, the in kernel ipw2100 driver with the small
wext16vs18 patch and the newest 1.3 firmware.

Searching google this seems to be a known issue but I couldn't find a
fix. Do you have any ideas how to fix this or what exactly is going
wrong here?
