For XML you will have to use FOP from
the apache project. And the XSLT-FOP
stylesheets from Walsh.

Unfortunally the stylesheets assume a
100% complient FOP implementation.

I am yet to render a DocBoock->PDF with
FOP and enjoy 100% success.
