it's a good general overview of GTK and GNOME programming from the C
side.

In addition, of course, there is considerable reference material at
http://developer.gnome.org/

If you want to work in a different language (C++, Perl, Python,
Java, .Net, etc), then most of the bindings projects have example code
and tutorials appropriate to their context.
