Judging from the header file I would say that it isn't possible.  But
I think it would be fairly easy to add.  It's probably no more than
filtering all filenames through fnmatch before adding them to the
list.

A minor change to gtk_file_selection_populate? and some functions to
change the glob-pattern for filtering.

How this will interfere with the filename completion I dare not say.
