OCR is not at all within the realm of GTK.  You need to look at programs
specifically designed for this kind of image processing. I would check
google.com and freshmeat.net for projects that implement this kind of
thing.  There may even be libraries that you can use from within your
GTK programs.  I presume you want to write a GTK interface that will
allow you to perform OCR on documents.
