I would suggest having a look at the source code for GtkDialog in GTK+
1.3 (the unstable devel version), especially the gtk_dialog_run()
function. You want to do what that function does.
When GTK 2.0 comes out of course you can just use gtk_dialog_run().

There's no gtk_dialog_run() function in gtk+ 1.3.1
What gives?
It was added after 1.3.1 was released. You need to look at CVS for it
(or can use LXR).
