the preferences are under the gthumb-icon on the top left.

PS: still hating the constantly changing, non-standard and bug-ridden UI 
of the "new" gthumb. scratching my head if that change was really an 
improvement, even in the long term. but then i am not a dev and just a 
user, so i better shut up. =)
