Hi,
It is an implementation choice. If you don't need a colormap anymore,
just delete the appropriate file from ~/.goffice/colormaps/

the customization menu for matrix charts (a.k.a. heatmaps) allows the user to
define custom color schemes or gradients. Once these custom color schemes are
defined, the GUI doesn't seem to offer a mechanism to delete them, and they
persist on application closure and on any unrelated spreadsheet subsequently
opened, i.e. globally.
Specifically, the menu offers the buttons "New", "Duplicate" and "Save" but no
"Delete".
