Gnumeric, when run from the compile tree, is independent of any
installed version of Gnumeric.

That does most of what you need unless you need your own version of
Goffice or other libraries at the same time.  In that case it can be
done with "--prefix=/somewhere" in the configuration phase.  It's a
little more involved and you may have to set various environment
variables.
