Toolbar button without menu item?

Hello,

I often use the toolbar buttons "Merge a range of cell" and "Split
merged ranges of cells".

I didn't find a menu item for them. 

Did I miss their appearance in the menu (global or context)?

I would like to use keyboard shortcuts for them.

Is there a possibility to define my own shortcuts?
