How to set ENV Variables

This is a newbie question, please bear with me.
I understand from other postings I've found that I must set the
enviromental variable of 'GNUMERIC_ENABLE_XL_OVERWRITE' to overwirte
exsisting Excel files.
How is this variable set in Gnumeric 0.67?
