Not a gnome-shell dev, but I think this may be possible. gnome-shell
keeps track of .desktop file corresponding to a running app. We can
reuse edit code (from gnome-menu editor for example) for .desktop
editing. All that is needed are some glue and a new menu entry in the
dock.
