I don't have a Mac running gnome, so can't test this for you, but I've used this for custom keybindings:

Click the down arrow in the upper-right corner of the screen, then click on the settings icon (the wrenches) in the lower-left of the pop-up.  Another window will pop up.  Select "Keyboard"; then inside of that click "Shortcuts" in the top bar.  Then click "Custom Shortcuts" at the bottom of the list on the left.  Click on the "+" to create a new keybinding.  The rest should be intuitive.
